Dec. 1 & 2 | The Art of Blending
Join Winemaker Morten Hallgren for a journey into the realm of winemaking as he presents the history of Cabernets from a European perspective, before it came to the New World. Morten will discuss the differences in philosophies of Old World vs. New World and explain why the cool climate of the Finger Lakes region is just right for producing elegant and expressive red wines. Learn about the individual varietals and how each enhances the final blend as well as how the Winemaker’s artistic vision and skill creates the pleasure factor in an impeccably crafted Cabernet blend.
You’ll also enjoy a vertical flight of four Ravines Meritage vintages from 2006-2009 and experience the art of blending as you taste and learn about the differences and sublime similarities between each vintage. The flight is accompanied by a plate of small bites paired and created to enhance the flavors of these complex wines: Wine-braised Beef & Shallot Tartlet, Muranda creamy bleu croutons, and Hedonist Bittersweet Truffles.
The Art of Blending will be held in the Barrel Room at Ravines Wine Cellars in Geneva, NY on December 1 & 2 from 12:00-3:00PM. $15 per person. RSVP required for all events. RSVP Now!
Nov. 11 | 10th Anniversary Celebration Winemakers Dinner
Join us on Sunday, November 11 as we celebrate 10 years of winemaking in the Finger Lakes with a 10th Anniversary Celebration Winemakers Dinner at Suzanne Fine Regional Cuisine. 2012 marks both Ravines and Suzanne’s 10th Anniversaries and what better way to celebrate than with a 5-course dinner at Suzanne paired with Ravines wines! The evening kicks off at 5:00PM with a reception, leading into Ravines’ owners, Morten & Lisa Hallgren, guiding you through the celebratory dinner, prepared by Suzanne’s owners, Bob & Suzanne Stack, that follows. We hope that you can join us as we commemorate this special milestone in the histories of Ravines Wine Cellars and Suzanne Fine Regional Cuisine.

Our grand food pairing is our dessert wine Appassionata which we are pairing with a selection of tarteletts avec beurre and local autumn fruit from the trees of our neighboring orchards.
The pairings are a la carte, but a seat for music is our treat in celebration of our Appassionata.
